Slow Cooker Lasagna
Monday, November 1st, 2010A super simple recipe that yields a nice lasagna dinner for your family.
Ingredients:
1 pound lean ground beef, 1 large onion, chopped, 2 garlic cloves, minced
1 can (29 oz) tomato sauce, 1 cup water, 1 can (6 oz) tomato paste
1 teaspoon salt, 1 teaspoon oregano, 1 (8 oz) package no-cook lasagna noodles
4 cups (16 oz) Mozzarella cheese, 1 ½ cups (12 oz) nonfat Cottage cheese
½ cup grated Parmesan cheese
Directions:
1. In skillet cook beef, onion and garlic over medium heat until meat is no longer pink
2. Drain meat
3. Add tomato sauce, water, tomato paste, salt and oregano – mix well
4. Spread a fourth of the meat sauce in an ungreased 5 qt slow cooker
5. Arrange a third of noodles over sauce (break noodles if necessary)
6. Combine the cheeses, spoon a third of the mixture over noodles
7. Repeat layers twice
8. Top with remaining meat sauce
9. Cover and cook on low for 4 to 5 hours or until noodles are tender
Makes 6 to 8 servings

Wellcare Foundation

Last weekend I had the honor of emceeing an event for the WellCare Foundation. The lovely lady pictured in the middle is Marge Ebeling founder of Wellcare. She is truly an inspiration. She created WellCare when she discovered that single working moms were having to make the decision to put food on the table or go to the doctor when they or their children were sick. Can you imagine???
WellCare is for moms who work but don’t have medical insurance. Because they work, they can’t qualify for any government assistance for medical care. Wow! Marge saw a huge gap in our system and fixed it. You go Marge!
Eleven years later she has five clinics, over 140 doctors and hundreds of volunteers who offer medical services to working moms and their children for FREE! Learn more about Marge and WellCare. You will be inspired. www.wellcarefoundation.org
The flowers were sent to me as a “thank you” from WellCare. We raised a lot of money that night but I have to say “back at ya!” WellCare for all you do for hard working moms!
